Pineapple Upside Down Cake

You think I would have learned my lesson and read all of the directions before dedicating myself to a specific recipe. But I didn’t. The night before making this for my husband’s birthday I realized that it required a GIANT muffin pan. I just have regular sized and of course the store I stopped by on the way home ON his birthday, didn’t have any giant ones either. So, I risked it and made it in a regular cake pan. It turned out well, perhaps a little thinner than most upside down cakes but the taste was spot on and the husband was pleased.

(Note: I did not taste it myself as I hate pineapple.)

      1. I had it when I first came to Australia. My Grandma made it. I remember looking at my dad questionably and he smiled and said you’re an Australian now son haha. I never ate it again after that

      2. It’s not. Don’t even bother trying it. I will say one thing though, I’m a big fan of odd combinations of food. I have cornflake and ketchup sandwiches haha. Cheese dipped in coffee mmm delicious. That one you should try. I also fry watermelon on the BBQ

      3. I’ve heard of fried watermelon on the BBQ but not the rest of them. There’s some interesting ones in there! I honestly don’t know if I’m brave enough to try lol.

  1. That’s so nice of you to make a cake for your husband that you don’t even like. It looks delicious although tbh pineapple cake doesn’t really appeal to me even though I do like the fruit.
