Lemon Cupcakes w/Lemon Cream Cheese Frosting

My first niece turned 1 on Pie Day. So of course Aunt CUPCAKES & Machetes is going to make her cupcakes! (She did not yet receive a machete.) Now she didn’t actually get to eat the cupcakes as she’s still learning solid foods but it doesn’t matter. I’ll bake her cupcakes every freaking year. She also had the BEST reaction when opening a book, which was screaming at the top of her lungs. I really wish I had gotten that on video.

I LOVE the cake in this recipe. I personally thought the icing was a little too sweet but everyone else assured me that I was the only one thinking such thoughts.

Lemon Blueberry Bread

I baked a couple of things this weekend but one was far superior than the other so it gets to go first.
