Chocolate Cupcake w/French Vanilla Frosting

Cupcake made cupcakes!

I actually need more cupcakes in my life and after finding this stellar chocolate cake recipe, they will definitely happen more often.

It was a different method combining ingredients than I’m used to, and the batter was strangely thin, but oh it’s so delicious.

I didn’t use the frosting recipe that is on the website. I used Ignited Moth’s tried and true light whipped frosting recipe.

1 package instant pudding mix (any flavor)

Milk

1 tub cool whip

Use just enough milk to make a paste of the pudding mix, then fold in half the tub of cool whip. Taste test. Add more cool whip to preference.

Peanut Butter Fudge Cheesecake Parfaits

These tasty lil’ bitches were not hard to make except for ONE thing: homemade whipped cream. I’ve said it before, I’ll say it again, don’t be like me and make sure you read the recipe all the way through. If you’re like me, still haven’t unpacked your stand mixer and don’t own a hand mixer, prepare to work your muscles. It takes a LONG time before whipped cream takes form with regular man power. After 15 minutes, I was forced to ask my husband for help. We’ve learned now that he’s a human power mixer. It still took another 15 minutes before it was the correct consistency.

Despite that, these were awesome. Pretty rich though so most people could only eat a half at a time.

Pills & Chocolate

With my coworker on vacation, I’ve logged overtime this past week and there will be plenty more next week. With zero baking time and limited reading time, you may only be getting drowsy evening rants for the next week and a half. Good thing most of you follow me for my witty antics alone.

Cooooo-kiees.

I haven’t made homemade cookies since I was little and I would make them with my aunt every time I came over to her house. So I went with something simple for my first go in oh say, 15+ years. Chocolate chip cookies.

Now these tasted fine, but I’m not a huge fan of cake-like cookies. So if you love soft cookies, this is just the thing for you.
