Easy Banana Bread Pancakes

Sorry that I’ve been a little MIA. I’m currently lost in the process of remodeling our bathroom and it’s been a doozy. But, I have to keep people fed to keep the work going so I tried out a new recipe this morning.

It was quick, from scratch and delicious. Thick batter just FYI.

Goodbye Summer – Recipes

I have the day off of work to go and see the one and only, Ozzy Osbourne in concert tonight. So I’m sitting on my wonderful patio having coffee with the dogs, which I’ve been able to do so little this summer due to the awful mugginess that plagued us most of the season, thinking that I am ready to say goodbye to summer. Autumn is my season (and it’s right around the corner!) and I’m ready to indulge it for everything it’s worth.

I haven’t done a lot of baking this year but there was a light lunch date with family in which I was asked to make some things to bring. What should I end the season with? Blueberries!

Both recipes really added to our little lunch date. Laid out alongside cookies, a fruit platter and cheese, meat, cracker platters, they were a perfect addition.

Cream Cheese Banana Bread

There are almost always bananas in my house. Nine times out of ten, my husband won’t eat them because he knows if they start to brown, I’ll turn them into some sort of delectable treat. Problem is, I’ve made so many now that I’m scouring the internet for new banana treats to try. I’ve found some fun new things that I look forward attempting, but until then, here’s a banana bread with one ingredient I haven’t tried making it with yet.

This bread was incredibly moist. I’m cringing at that word but it’s the best I can think of to describe it. Easy to make recipe.

Pumpkin Banana Bread

I didn’t realize until I had mixed all my ingredients together that I was supposed to be baking these in glass loaf pans. I don’t have any so I used regular loaf pans and began checking the bread after about 35 minutes. My total bake time ended up being around 50 minutes. I also skipped the pecans.

This was divine. The flavor was a perfect blend of pumpkin and banana and the texture moist. Perfect to bring as an addition to any holiday party this season.

Chocolate Chip Banana Bread

There is no easier way to spice up a classic than to throw some chocolate chips into the mix.

And if you’re not human, like my weird ass husband, and want some more banana bread but without chocolate chips, you can use the exact same recipe without the chips and the resulting banana bread is still tasty.
