Blueberry Zucchini Bread

I’ve been getting that itch lately to bake again. Plus, my coworker brought in and gave away humongous zucchinis from his garden. One of those giants made our dinner AND 2 cups of shredded zucchini for this recipe. I’ve got bananas that are going to brown soon and pumpkin/apple season is right around the corner. Let the baking madness begin!

*side note* this recipe is good even if you manage to forget to add the vanilla extract. :3

    1. Haha, I was pleasantly surprised when it still turned out very good without the extract. I made rob taste test it before I told him of my failure. 😛
      Might be putting these brown bananas to a good use today….

  2. That baker’s website uses zucchini in more ways that I knew a person could! The chocolate zucchini and carrot and zucchini bars sound amazing. As Taylor Swift might say, bake it off.

  3. Yum, looks great! And I had to laugh, because I made an apple sponge cake this weekend, and also forgot the vanilla extract. Thank goodness it’s one of those things that can be missed and wouldn’t ruin the whole recipe 😛
