Peanut Butter Fudge Cheesecake Parfaits

Don’t you wish you were one of my coworkers? If you didn’t before, you might now.

These tasty lil’ bitches were not hard to make except for ONE thing: homemade whipped cream. I’ve said it before, I’ll say it again, don’t be like me and make sure you read the recipe all the way through. If you’re like me, still haven’t unpacked your stand mixer and don’t own a hand mixer, prepare to work your muscles. It takes a LONG time before whipped cream takes form with regular man power. After 15 minutes, I was forced to ask my husband for help. We’ve learned now that he’s a human power mixer. It still took another 15 minutes before it was the correct consistency.

Despite that, these were awesome. Pretty rich though so most people could only eat a half at a time.

Recipe here.

  1. I’d read the directions for making whipped cream too but don’t have a mixer so that was a nope for me, I’m impressed you did it! These sound amazing, cheesecake isn’t my favorite but anything covered in peanut butter fudge is perfect.

    1. Just buy a tub of cool whip! The homemade version is only a smidge better so I don’t think it’s really worth the effort of trying to make yourself anyway.
Peanut butter + chocolate = life.

  2. OMG, so yumm!
I don’t have a hand mixer, even tho i’m planning to get one since forever. When i need to make whipped cream, i use my shaker i got for my protein powders. It has a little wire ball thing in the cup and it makes awesome whipped cream after about 2-3 minutes of shaking it. 😀
