I wanted to get one more zucchini bread recipe in before zucchini went out of season. My husband was begging for this one and both the boys (my husband and his best friend/roommate) ate 1 & 1/2 loaves of this in roughly 48 hours. So I suppose that makes it a pretty damn good recipe. I did not make the icing for the top. Icing on bread is not my favorite thing. Glazes are better.
Looks delicious! I just warm it and slather butter on top. Go big or go home. Lol

Icing is for cake; glaze is for breads hehe. I’ve never had zucchini bread, but I keep hearing about it. A bread made of a veggie seems so odd to me, but then again I mean wheat…though that’s more of a grain than a vegetable, but semantics.
It’s more of a flavor than actually getting any of the texture/veggie in the bread. You see it, but you can’t distinguish it with your mouth. At least I can’t.
I’m willing to try this. It’s not gross and it’s a vegetable so I’ll go for it at least once.
